SHARON’S CORDON BLEU SUBS
Pan-fried soy chicken patties with cracked pepper. Layered with pan-fried soy ham slices and heated sweet red roasted peppers on a broiled soft sub roll spread with Dijon mustard and soft Animal-Free Butter!
Makes 2 subs
2 bakery-style soft sub rolls (I used sesame seed), cut in half and broiled open-side up till golden and lightly browned on some edges
olive oil
2 MorningStar Grillers CHIK’N (non-breaded soy chicken patties)
freshly cracked black pepper
4 slices Yves Veggie Deli Ham
Dijon mustard
Animal-Free Butter (see in non-dairy section for recipe), or use a commercial variety at room temperature
4 lg. pieces sweet red roasted peppers, heated
Heat 1-2 T. oil in medium skillet (preferably cast iron) over medium-high heat. When skillet is hot add 2 soy chicken patties. Liberally pepper, then fry on one side without turning till that side is nicely browned and crisp.
Turn the patties over, move around in skillet to evenly coat with oil, pepper liberally again and fry again without turning, till browned and crisp. Cut each pattie in half in the skillet and turn off heat.
Broil sub rolls as instructed, then spread one half of each roll with Dijon mustard and the other half with Animal-Free Butter.
Place 2 halves each of the soy chicken patties on top of the mustard halves of the sub.
Oil skillet, return heat to medium-high heat. Quickly fry 4 slices of the deli ham on each side. Place, folded, on top of soy chicken.
Place heated roasted peppers on the Animal-Free Butter side of the sub. Close, cut in half and serve, or serve whole.
Notes: A great sub. It’s easy, and when you take the few minutes to broil the roll and prepare the ingredients like you’d like them prepared at your local sub shop, you get the taste and feel that you like in a hot sub.
Cracked pepper spices up the patty and frying till crisp creates a perfect texture balance for this sandwich. Real chicken isn’t mushy and neither should the center of these patties be too soft to properly enjoy.
Use a thick roasted pepper. Mancini and Vlasic are your best choices.
