

EXQUISITE TURNIPS AND BEETS
Cubed turnips and beets boiled separately till tender, then sautéed with extra virgin olive oil, garlic and cilantro. Serve as is or sprinkle with a little plant Parmesan just barely melted. Garnish with cilantro. Serve as side dish or small plate. Can root vegetables be exquisite? These can when done this way!

Turnips and beets never had it this good! Hm, I could eat the whole skillet!
Serves 4-6 sides
about 2-1/2 lbs. fresh turnip, cut ends off, peel, cut into 1/2 inch slices, stack, then cut into 1/2 inch cubes
about 1 lb. fresh beets, cut off ends, peel, cut into 1/2 inch slices, stack, then cut into 1/2 inch cubes
2 T. extra virgin olive oil
1 T. liquid smoke
2 cloves fresh garlic
fresh cilantro- rinse and twist off a handful of tops – plus extra for garnish
2 T. margarine
1/2 t. granulated maple sugar or brown sugar
salt and fresh grind black pepper


1- Boil turnips in lots of water till fork-tender. Remove with slotted spoon to plate.
2- Boil beets in same water till tender. Remove with slotted spoon to plate.
3- In large skillet, over medium heat, melt olive oil.
4- Add liquid smoke.
5- Add turnips and beets, stirring to coat. Cook about 5 minutes, stirring often.
6- Chop fresh garlic with cilantro tops on board. Add to skillet and stir.
7- Add margarine and maple or brown sugar, stirring to melt.
8- Salt to taste.
9- Fresh grind black pepper to taste.
10- Cover, reduce heat to low and cook till done to your liking.
11- Add a little plant Parmesan to skillet for added flavor and cook till just melted.
12- Plate individually, top with Follow Your Heart Feta Crumbles, then top with applesauce.
13- Serve and wait for the praise.
Notes: We cook the turnips and beets separately, the turnips first, so the beets don’t turn the turnips red.
Boiling the beets removes the outermost coloring, so they’re safe being in the same skillet later with the turnips. Prior boiling limits the bleeding.
