AFC Raisin Pecan Rice

RAISIN PECAN RICE

This versatile rice can take the place of mashed potatoes and gravy, or bread stuffing and can even be served as a hot cereal with nut milk, I preferred a cashew yogurt beverage over mine.

The rice and accompanying gravy are sweet, but not too sweet. Just right. Upon first tasting right from the stove I thought wow this is like caramel-flavored raisin pecan rice. You might have thought it was dripping with butter.

The SMOKY FRUIT SAUCE can also be used over cake or dairy-free ice-cream!

The JUMBO SUN-MAID RAISINS are multi-colored and more sophisticated in flavor and texture than regular raisins – an added treat for a holiday dish!

Serve plain with the sauce, or top your favorite pan-fried plant sausage – patties or links!

Makes 10 cups rice, 2-1/2 cups sauce

RICE:

4 c. water

2 c. Jasmine rice, rinsed well

1 c. pecan halves

1 c. SUN- MAID MIXED JUMBO RAISINS

1 T. salt

1/2 c. dark brown sugar – packed

2 t. dried rubbed sage, less if it’s ground

2 t. liquid smoke


1- In large saucepan combine all ingredients. Stir, bring to boil, stir again, cover, reduce heat to low and cook 15 minutes.

2- Remove from heat, stir with spoon up from bottom.




SMOKY FRUIT SAUCE: Makes 2-1/2 cups

1-2/3 c. spiced apple cider or plain

2/3 c. 100% pineapple juice

2/3 c. fresh squeezed orange juice or bottled

1/2 c. dark brown sugar

1 t. salt

fresh grind black pepper to taste

1 t. liquid smoke


2 t. guar gum powder


1- Combine all ingredients in saucepan, except guar gum.

2- Stir well, heat till warm, then sprinkle guar gum on top. Briskly whisk into top layer of liquid, till dissolved, then go deeper, raise heat to medium and continue cooking and whisking till sauce thickens.

3- Lower heat and cook about 10 minutes, stirring often. When the sauce becomes translucent and looks like a glaze, it’s done.

4- Remove from heat. Serve now or cool to room temperature, pack in covered container and refrigerate.

• Be careful the sauce doesn’t boil over the pan.


1 pkg. FIELD ROAST ITALIAN SAUSAGE (4 lg. links) – remove casing, cut in half lengthwise, then in half crosswise to make 16 pieces, then pan-fry in oil or Miyoko’s European-Style Sweet Creamery Butter



TO SERVE: Mold individual servings in cups, invert onto plates. Place sausage alongside, top with gravy, fresh grind black pepper and serve.

• For extra flavor add fresh cilantro as a topper! A perfect match for this sweet rice!


NOW FOR THE HOT CEREAL: Easy. Microwave the rice and the sauce separately, then pour the sauce over the cereal.

Then if you want a milk, pour a little of your favorite plant milk over all – it doesn’t need much. I used Forager Cashewmilk Yogurt Beverage, strawberry flavor.

Then I topped it with a few fresh cilantro leaves. High-end cereal to be sure. A must on an serious restaurant menu that serves breakfast or late night soothing meal in a bowl!

Notes: Flavored rice should be served the day it’s made. What restaurant serves leftover rice, none that I know.

Still, if it is leftover, reheat in a microwave or in a non-stick skillet to keep from getting too soft. This textures more like a sticky rice because of the sugar content, so expect clumping, that’s part of what makes it special.
