Green cabbage squares, sweet McIntosh apple (keep the peels on) and yellow onion caramelized with nothing more than a little oil, salt and pepper. The slow cook makes the difference between ordinary and extraordinary. Serve as a side dish or add to a gravy and ladle over garlic mashed potatoes!
Keeping it simple!
Makes 3 cups
2 T. corn oil
5 c. diced green cabbage – I used the inner leaves and saved the outer leaves to make stuffed cabbage
2 c. diced yellow onion
1-1/2 lbs. sweet apples – I used McIntosh – wash, core and cut into 1/2 inch cubes (no need to peel)
1 t. salt plus to taste
fresh grind black pepper to taste
In extra-large skillet, over medium heat, melt oil.
Add cabbage and onion. Stir to coat, then cook about 3 minutes.
Reduce heat to medium-low and continue to cook till soft.
Add apples, salt and pepper, then cook on medium-low heat, stirring often (under, up and over) till caramelized – it takes a while, but the end product will be worth the time.
