BARBECUE BEANS AND BAKED TOFU
BUSH’S STEAKHOUSE GRILLIN’ BEANS sauteed with onion, pepper, celery and mushroom. Combine with green olives and lemon. topped with baked seasoned tofu cubes and a drizzle of sweet sour salty sauce! So good!
Makes 4 main dishes
SAUTE: Makes 4 cups
1 T. grape seed oil
1 c. diced celery, small
1 c. diced sweet onion, 3/8-1/2 inch square
1 c. diced green pepper, 3/8-1/2 inch square
1/2 t. salt
8 oz. fresh white button mushrooms, washed and sliced
fresh grind black pepper to taste
1 t. garlic powder
22 oz. can BUSH’S STEAKHOUSE GRILLIN’ BEANS – fat-free
1/2 c. sliced green olives, drained
2 T. fresh lemon squeeze, plus additional to be squeezed over each serving.
BAKED TOFU:
12 oz. pkg. water-packed extra-firm tofu, rinse, pat dry, then cut into 1/2 inch cubes.
1 t. salt
2 T. smoked paprika
2 t. onion powder
SAUCE:
3 T. Balsamic vinegar
3 T. green olive liquid from jar
2 T. water
1 T. light brown sugar
1/4 t. guar gum powder
SAUTE:
In large skillet, over medium-low heat, melt grape seed oil.
Add celery, onion, green pepper and salt. Saute till partially soft.
Add mushroom, black pepper and garlic powder, stir well and saute on medium-low heat till tender.
Add beans and green olives and lemon, stir well, reduce heat to low and cook about 10 minutes, stirring as needed.
When done, adjust for salt and pepper and set aside.
BAKED TOFU:
Preheat oven to 350 degrees
In large bowl place tofu cubes.
Sprinkle salt, paprika and onion powder evenly over tofu.
Shake bowl and pop it up and down and around till all cubes are evenly coated with the seasoning.
Place a cooling rack over a baking sheet, arrange cubes, not touching on rack.
Bake in preheated 350 degree oven for 20 minutes.
Remove and set aside.
SAUCE:
Combine Balsamic vinegar, olive juice, water, sugar and guar gum in small bowl, whisk till smooth. Set aside for 15 minutes, then whisk again till smooth.
- It takes the guar gum a while to finish thickening after it’s been mixed.
ASSEMBLY:
Reheat beans till hot and place serving onto individual plates.
Top with baked tofu cubes.
Drizzle with sauce.
Sprinkle with fresh grind black pepper.
Squeeze a bit of fresh lemon over all.
Serve.
Notes: The tofu cubes don’t need to be hot. If you want them hot, then return to oven for 5 minutes.
BUSH’S GRILLIN’ BEANS don’t have a lot of liquid in them, as other canned baked beans do, which for this recipe works out great, since we don’t want a lot of sauce.
