Blueberry Walnut Russian Toast


Dairy free cream cheese mixed with a smoky dried berry walnut crumble and fresh blueberries. Served atop fresh toasted Russian black bread!

Makes 2 cups spread

8 oz. container Tofutti Better Than Cream Cheese

2 T. creamy dijon mustard

1/4 t. pink Himalayan salt

1/4 c. light brown sugar

1/2 pt. fresh blueberries, rinsed well

1 c. Smoked Berry Walnut Crumbles (see recipe below)

fresh sage leaves, thinly sliced for garnish

fresh Russian Black bread, toasted

In mixing bowl place cream cheese, mustard, salt and brown sugar. Stir till thoroughly mixed and sugar dissolves into cream cheese.

Add blueberries and berry walnut crumbles. Mix well.

Toast the black bread. Spread with margarine. Top with berry walnut cream cheese. Lay a few strips fresh sage over top of each and enjoy.

Smoked Berry Walnut Crumbles: Makes about 2-1/2 cups

2 c. walnut halves ( place in food processor and process till evenly crumbly and not yet sticking together)

1/2 c. apple cider

1/2 c. dried cherries and berries (I used Traverse Bay Fruit Co. BERRY CHERRY BLEND)

1/2 c. light brown sugar

1 t. pink Himalayan salt

sev. shakes liquid smoke

In large skillet, over medium heat, place cider, dried cherries and berries, brown sugar, salt and liquid smoke. Stir well. The sugar doesn’t need to be completely melted yet.

Add walnut crumbles all at once, stirring continuously to thoroughly coat. Continue to cook, stirring slowly to cook the sugar, evaporate the liquid and till walnut crumbles start sticking together.

Remove skillet from heat. When the nuts are no longer too hot to touch, drizzle a scoop of white sugar over all. Toss with hands and separate nut grains as best you can with your fingers, while coating with sugar.

Keep at room temperature or place in covered container and refrigerate till ready to use, depending upon how long you expect to keep them. They’re so good, they don’t last long. You better hide them if you need them for a designated recipe.

Notes: When buying blueberries always check the bottom of the crate for mold around the nubs of the berries. Search for mold-free bottoms. Don’t think you can just wash it off.  You pay top dollar for blueberries. Don’t buy moldy ones. You send the grocer a message to lower the standards for everyone else based on your behavior of acceptance of an inferior product. If the grocer doesn’t refrigerate them in time, they grow mold rapidly. It’s on them to handle the product appropriately.

If you can’t see the bottom, don’t buy them.

Steve likes margarine on his toast, regardless of what else goes on it. I do the opposite. If I’m spreading something creamy, then I forego the added margarine calories. Every now and then I do it his way and it is a treat beyond the treat. But not doing it that way all the time, makes the treat all the more enjoyable. He disagrees.
