APPLE CELERY SLAW
A festive, yet simple coleslaw that can stand up to any Main Dish event! Happy Holiday!
Makes approx. 9 cups
2 lg. red apples, washed, cored and cut into approx. 1/2 inch cubes
1 t. turmeric
1 c. diced celery – cut stalks from end to end into 3rds, then crosswise into small cubes
1/3 c. fine dice red onion
8 c. packed shredded green cabbage
1 t. celery seed
1 canned chipotle pepper in Adobo sauce – shake off excess sauce and finely chop
1/2 c. AFC MACARONI SALAD SAUCE
1/2 c. Hellman’s Vegan mayo
fresh grind black pepper to taste
salt to taste
Place apple cubes in bowl and top with turmeric, then stir till turmeric reaches all surfaces of apple. Let set while you prepare the other ingredients, stirring occasionally till turmeric melts into the moist surfaces of the apples. This procedure keeps the apples from turning brown.
Assembly: Place all ingredients into an extra-large bowl. Toss to evenly coat with dressings, then pepper and salt to taste.
Refrigerate covered till ready to serve.

AFC MACARONI SALAD SAUCE
Vegan sour cream has about half the calories of vegan mayonnaise, and it’s thicker, so you can add more to it without watering it down too much. For that reason, at least in some salads, vegan sour cream has become my new ‘go to’ base for mayonnaise replacement!
Makes approx. 2 cups
12 oz. pkg. vegan sour cream – I used Tofutti brand
1/2 c. prepared yellow mustard
1 t. garlic powder
1 t. ground coriander
2 T. vegan yeast (nutritional yeast)
1 t. anchovy-free Worcestershire sauce, I used PAMPA brand
2 T. light brown sugar
1/2 t. malic acid
1 t. salt or to taste
Combine all dressing ingredients in bowl, stirring well after each addition. Cover and refrigerate till ready to use.
The vegan yeast and Worcestershire sauce enrich the overall flavor achievement of this sauce.
The sauce is thick which better binds the ingredients in the salad. Can also be used for coleslaw.
Notes: Also use Apple Celery Slaw as a sandwich topper.
Thomas’ Nooks & Crannies bagel lightly toasted. Spread with veggie mayo and mustard. Top with Apple Celery Slaw and veggie deli slices and veggie cheese singles of choice. Great Bite!
