ASPARAGUS AF SHRIMP TOAST
Okay, okay. I know there are no actual shrimp animals on this toast. Still, it is the finest shrimp toast you will ever encounter! Popcorn shrimp? Well, this delicacy pops all over your buds and palate! Once you taste it, you’ll never forget the experience!
Serves 1 or as many as you like
There are two recipes you have to make before making the AF Shrimp Toast:
BURNT GARLIC ASPARAGUS and FAT-FREE AF ORANGE MAYO SAUCE
AF SHRIMP TOAST Per Serving:
1 slice 12 grain bread
oil for frying
sweet red or yellow roasted pepper, cut into strips – enough to cover the surface of the toast without overlapping – heated in small skillet or saucepan
Burnt Garlic Asparagus – about 6-8 spears per toast serving
Fat-Free AF Orange Mayo Sauce – about 1/3 c. per serving
3-4 fresh red grape tomatoes, cut into halves from end to end
fresh cilantro sprigs for garnish topper
fresh grind black pepper
fresh grind pink Himalayan salt (optional)
First we toast the bread in a fry pan. Rather than oil the pan, we brush the bread with oil using a paint brush.
Heat the skillet over medium-low heat. Brush one side with oil. Place bread oil side down in skillet, then brush top side with oil. Brown on both sides, pressing bread down with a pancake turner as it cooks. Transfer to plate.
Place heated roasted pepper evenly over toast.
Spoon a little May Sauce over peppers.
Top Peppers with asparagus spears, adding some of the burnt garlic.
Spoon remaining sauce over asparagus. Top with cut grape tomatoes followed by fresh cilantro springs.
Sprinkle with fresh grind black pepper and if desired a little fresh grind pink Himalayan salt.
Serve immediately.
