AFC HORSERADISH SWEET POTATO SPREAD
When you have AFC Coral Horseradish Sauce on hand, this is a great appetizer to make with it. Pretty to look at, ultra creamy and perfectly balanced flavors. This can also be used as a sandwich spread for your veggie or burger sandwiches.
Makes about 1-1/2 cups
1 soft-baked sweet potato, chilled overnight, peeled and cubed
8 oz. container Tofutti Better Than Cream Cheese, chilled
1/3-1/2 c. AFC Coral Horseradish Sauce
2-3 T. chopped celery plus a leave stalk for garnish
smoked paprika for garnish
crackers of choice
Place potato and cream cheese in small food processor and process till as smooth as you can.
Add the horseradish sauce, then process again till smooth. Salt to taste. Process again.
Transfer to serving dish. Top with chopped celery and leafy stalk as garnish.
Place on platter and surround with crackers of choice.
Lightly dust all with sifted smoked paprika (place in small wire mesh strainer and lightly tap over areas you want dusted). Serve.
