AFC RED TURKEY CHEESE TOFU SPREAD
AFC RED TURKEY CHEESE SAUCE mixed with tiny diced green pepper and Silken extra-firm tofu. Topped with chopped roasted pepper and served with whole wheat crackers. An eggy-white soft boiled texture with smokey high garlic overtones. Crisp lines meet sweet expressions of rightness! You are God after all!
Makes 2 cups
12.3 oz. pkg. extra firm Silken tofu, squeezed and twisted in tofu cloth to extract liquid
1/2 – 3/4 t. pink Himalayan salt
1/3 c. fine diced fresh green pepper- clear cut tiny dice, not chopped that produces liquid from the mush – keep the tofu as dry as possible
1/2 c. AFC RED TURKEY CHEESE SAUCE
1 t. sugar
chopped sweet red roasted pepper for garnish
crackers of choice – I used Keebler brand TOASTEDS Harvest Wheat
Place water-extracted tofu in mixing bowl with salt. Mash with fork till evenly mealy.
Add green pepper. Stir to distribute throughout tofu.
Add AFC RED TURKEY CHEESE SAUCE plus sugar. Continue to mix till all the white of the tofu turns a coral color.
Transfer to serving bowl. Garnish with chopped sweet red roasted pepper.
Place on platter and surround with crackers. I used Keebler TOASTEDS Harvest Wheat with good results.
For restaurant service you’ll want to serve a single portion. Place a large scoop in a serving dish and surround with crackers. Top with chopped roasted peppers.
