CREAMY ORANGE STRING BEANS
Your guests will be talking about these delicious green beans and wanting the recipe. The recipe is so simple that you won’t have to write it down – just tell them how to do it! Orange marmalade, a little vegetable broth, salt and cilantro mixed with Tofutti Better Than Cream Cheese. Easy!
1/2, 8 oz. container Tofutti Better Than Cream Cheese, at room temperature
1/4 c. orange marmalade
2 T. vegetable broth
1/2 t. sea salt
big handful fresh cilantro leaves, coarsely chopped
1-1/2 lbs. fresh string beans, wash well and remove tips
Make cream sauce first.
Combine Tofutti Cream Cheese and orange marmalade in bowl. Stir to thoroughly incorporate.
Add vegetable broth, salt and cilantro. Stir till smooth. Set aside.
Steam green beans till tender but still bright green. Immediately toss in bowl with sauce, or plate and spoon sauce over beans without tossing. Garnish with additional cilantro and serve immediately.
Notes: This is a perfect recipe for string beans or fresh steamed asparagus.
