AFC MOSCATO GRAPE SAUCE ©

Use to sauce veggies and veg meats. Also makes an elegant salad dressing for greens, fruit and veggies!
Makes 3-1/4 cups
1 lb. sweet red seedless grapes, about 2-1/2 c.
2 c. water
1/3 c. sugar
1/2 t. sea salt
1 c. Moscato wine (white semi-sweet) – Trapieche from Argentina has a strong flavor, which is good for cooking
Slowly boil grapes, water, sugar and salt in saucepan for 30 minutes.
Mash in saucepan with potato masher till as pulpy as you can get it.
Add:
1 c. additional wine
1 t. smoked paprika
1/2 t. ground coriander
1 t. additional sea salt
1/4 t. black pepper
1/4 c. additional sugar
Continue to cook at a slow boil for 15 minutes.
Add:
2 T. arrowroot powder mixed with 1/4 c. additional wine in cup till dissolved
Stir till thickened, then continue to cook about 5 minutes. Remove from heat, mash again with potato masher, cool to room temperature, then pack in covered containers and refrigerate till ready to use as desired.
Salad ingredients: cut romaine lettuce topped with celery sliced on the diagonal, sliced fresh strawberries, diced veggie chicken. Pour cold sauce over all, then top with fresh ginger sticks, almond crumbles and freshly ground black pepper. Wow!
