POTATO BREAD QUESADILLA

Potato bread spread with Chipotle flavored Just Mayo and mustard, mounded with Daiya Mozzarella shreds. Flattened while pan-frying till crisp and cheese melts!  Taste the pleasure!

Makes 1 sandwich

  • Before grilling veg cheeses in a sandwich, always bring cheese to room temperature before assembling and grilling

2 slices potato bread

Just Mayo – Chipotle flavored

prepared yellow mustard

Daiya Mozzarella shreds – at room temperature

margarine

extra virgin olive oil

Spread one slice of bread evenly with Just Mayo.

Spread second slice evenly with prepared yellow mustard.

Generously mound Daiya Mozzarella shreds onto either slice. Close sandwich and press with palm of hand to flatten.

Add equal amounts of margarine and extra virgin olive oil to skillet for frying. Melt over medium-low to medium heat.

Place sandwich in center of skillet. Fry till crisp.

Flip sandwich, press hard with pancake turner. Cover skillet, reduce heat to low and cook 2-3 minutes.

Remove cover. The top will be wet from the steam. Flip sandwich to recrisp the wet side. Remove from skillet, cut and serve.


Notes: If you make this sandwich exactly as instructed, you’ll have created and enjoyed your first Potato Bread quesadilla!
