GRILLED PEANUT BUTTER PICKLE AND ONION
There’s not a big melt on this, because we use natural peanut butter – fresh pressed. But the heat softens it nicely, not requiring the ooze factor. Dill pickle, sweet onion and country dijon mustard bring this natural peanut butter to a rustic but lovely conclusion!
Makes 1 sandwich
2 slices whole grain bread
fresh ground natural peanut butter
dijon mustard, counry style
sliced kosher dill pickles
thinly sliced sweet onion
oil for frying
freshly ground black pepper
Spread 2 slices bread evenly with natural peanut butter.
Top one slice evenly with mustard, then the other slice with pickles and onion. Close.
Heat a little oil in skillet, over medium heat, till hot.
Sprinkle pan with black pepper.
Add sandwich. Fry on both sides will browned. Cut into triangles and serve.
