THE VEGGIE HOT DOG SANDWICH
This is Steve’s favorite way to eat hot dogs!
Makes as many as you want
Per sandwich:
veggie hot dogs of choice – 1-1/2 per sandwich
oil for frying
2 slices potato bread
veggie mayo
prepared yellow mustard
3 cherry or grape tomatoes, cut in half from end to end
crisp lettuce – I used iceberg/head lettuce
sweet relish
chopped sweet onion
freshly ground black pepper
Cut 2 hot dogs in half from end to end. Fry lightly in a little oil till heated through.
Spread both slices of bread with veggie mayo, then squirt one slice with mustard.
Place tomato halves equidistant on top of the bread spread only with mayo. Then top tomatoes with lettuce.
Place 3 halved hot dogs on slice with the mustard – 2 on the bottom, then 1 place diagonally over the other 2 (or any way you want).
Top the hot dogs with sweet relish, followed by chopped onion.
Sprinkle freshly ground black pepper over both slices. Close and serve whole.
Notes: I always had my hot dogs on a bun, or when no bun, cupped in a slice of bread with condiments. This time I decided to make one for myself, his way. Once I got past the bun concept, I saw why he liked it. It’s a great sandwich!
