APPLE WALNUT KAHLUA DESSERT
Golden delicious apples cooked with walnuts and golden raisins in a Kahlua Rum & Coffee Liqueur. Flavored with ginger, lemon and cinnamon. Topped with soy or coconut whipped cream and orange zest!
Makes 8 ice-cream scoops
6 golden delicious apples, peeled, cored and sliced (about 1/2 inch at the widest part of the slice in the middle)
strained juice of 2 sm. or 1 lg. lemon – roll it first on counter to break down the membranes to extract the most juice when squeezed
1 c. walnut halves
1/2 c. golden raisins
1/2 t. salt
1/2 t. powdered ginger
1/2 t. cinnamon
1/2 c. dark brown sugar
1 c. Kahlua Rum & Coffee Liqueur
soy or coconut whipped cream for topping
zest of 1 orange for garnish
In large saucepan place apples and lemon juice. Toss to coat the apples with the juice.
Add remaining ingredients, except topping and garnish. Stir well, then cook on medium heat (a slow boil) for about 15 minutes.
Cover, reduce heat to low and cook till apples are soft, stirring occasionally
Remove cover and continue to cook till liquid almost all evaporates, but where ingredients are still wet. Remove from heat. When warm refrigerate till cold.
To serve: Scoop with ice-cream scoop or spoon onto dessert plates. Top with whipped topping, then sprinkle with orange zest.
Notes: If you want to use smaller sized walnuts, then measure out less for this recipe.
