I was thinking fluffer nutter (a peanut butter & marshmallow fluff sandwich from when I was a kid). This is even better. So light and creamy. A real treat whether you’re low on funds or not!

Makes 1 sandwich

country-style white bread

creamy peanut butter

strawberry preserves

soy whipped cream – I used Rich’s Whip brand – thaw, pour about 1 c. into bowl, then whip with wire whisk till it forms peaks as desired

Spread both slices of bread with peanut butter. Spread one slice with strawberry preserves, then top the slice with only peanut butter with soy whipped cream. Close sandwich, cut and eat!

Notes: The strawberry preserves went especially well with the soy whipped cream, but use any preserves you like or have on hand.

Save leftover whipped soy cream for other use.
