VEGGIE BURGER SPINACH TORTILLA WRAP

Spinach tortilla wraps take your favorite veggie burger sandwich to a new level! For this one we use lettuce, tomato, onion with veggie mayo and mustard!

Makes 1

oil for frying

your favorite veggie burger

1, 12 inch spinach tortilla – at room temperature

veggie mayonnaise

prepared yellow mustard

shredded lettuce

sliced tomato

sliced sweet onion

Fry up your favorite veggie burger just the way you like it.

Warm up the tortilla a bit in the pan.

Spread tortilla with veggie mayo, then squirt a little mustard here and there.

Pile some shredded lettuce in the center of the tortilla.

Top lettuce with the fried burger. Top burger with a slice of tomato, followed by sliced onion.

Sprinkle with freshly ground black pepper.

Wrap: Bring the edge of the tortilla closest to you up and over the ingredients.

Fold the right side up and over the ingredients, then the right side.

Now roll it forward to make a bundle.

Fry in a little oil on bottom to lightly brown, then flip over and do the same on the other side.

Cut in half with sharp knife. Stand bottom side down and exposed side up on serving plate – side by side. Makes for a very attractive presentation.
