ENERGIZER BREAKFAST BURRITO
A charred tortilla spread with peanut butter and orange marmalade. Topped with fresh banana slices, raw rolled oats and cashew crumbles. Sprinkled with cinnamon. Roll and eat!
1, 8 inch flour tortilla
fresh banana slices
raw rolled oats
cashew crumbles (place 1-2 cups cashews in food processor and process till crumbly – place in lidded jar to use as needed in recipes, or place in paper bag and pound with hammer or bottom of heavy skillet till pulverized)
Hold tortilla over a stove flame or place directly on heated stove coils till charred in some spots.
Place on counter. Spread non-charred side thinly and evenly with peanut butter (or other nut butter).
Spread orange marmalade evenly and thinly over peanut butter.
Place fresh banana slices along center in a row.
Sprinkle about 1 tablespoon oats to one side of the banana, then sprinkle nut crumbles on the other side.
Sprinkle with cinnamon.
Turn tortilla so that the row of banana slices is horizontally in front of you. Lift tortilla edge closest to you and wrap around the row of bananas, tucking it under, then continue rolling. Seal edge with a little peanut butter. Cut or serve whole. Serve.
Notes: This breakfast doesn’t take long to make, and makes you feel good for hours afterward.
