FRESH MELON AND PINEAPPLE DESSERT
Watermelon, cantaloupe and pineapple served with a Ginger Beer Banana Cream Sauce! Gentle flavors. The sauce is so good I could drink it!!
Makes 17 cups fruit
Sauce: Makes 3 cups
4 ripe, med.- size bananas, peeled and broken into pieces
1 c. ginger beer (I used Goya brand – alcohol and gluten-free)
1/2 c. Rich’s Non-Dairy Creamer, full strength (also gluten-free)
Combine bananas and ginger beer in blender container. Blend till very smooth.
Add creamer and blend again till smooth and frothy. Set aside.
5 c. fresh, seedless watermelon cubes
1 lg. cantaloupe, peeled, seeded and cubed
1 fresh pineapple, skinned, cored and cut into wedges
To serve: Place fruit into large bowl to toss and evenly distribute. Transfer to serving dish.
Place sauce in separate bowl, sprinkle lightly with nutmeg, and serve alongside for guests to spoon over individual servings of fruit.
Notes: A refreshing, easy to make dessert made extra special with the addition of this wonderful sauce!
