Creamy peanut butter, veggie ham, sauteed sweet onion and mustard on whole wheat bread, pan-grilled in oil and cracked pepper! The new grilled cheese sandwich! Walk on water delicious!

Makes as many as you want

oil for frying

fresh cracked pepper (use large grind on your pepper mill, or crush whole peppercorns on your cutting board using flat side of a large knife)

sliced sweet onion, about 1/4 inch thick


2 slices veggie ham slices per sandwich (I used Yves veggie deli ham)

2 slices whole wheat bread ( I used the common grocery store variety)

creamy peanut butter (I used Jif Natural Creamy)

prepared yellow mustard

Drizzle a little oil in a skillet, over medium heat. Add sliced onion, a little salt, and saute till golden and wilted, but not mush. Transfer to plate.

Place veggie ham slices in skillet, and just heat through, about 15 seconds on each side. Transfer to plate.

Spread one slice of bread with peanut butter – not too much, because you don’t want it to melt all over the skillet. Top with onion.

Spread the second slice with mustard. Top with veggie ham slices. Close sandwich.

Drizzle a little more oil in the skillet, again, over medium heat.

Sprinkle lots of cracked pepper in the skillet, then roll the skillet around to evenly distribute the pepper in the oil.

When the skillet is hot, place the sandwich in the skillet and wait till it’s sufficiently browned. Remove from skillet, add a little more oil and a little more cracked pepper. Return sandwich to skillet, brown the second side.

Remove from skillet, cut and serve.

Notes: Creamy peanut butter is required to achieve the ‘melt’. Freshly ground doesn’t work here.

I’ve been making peanut butter sandwiches like this for years. Usually I make it with sweet red roasted peppers and peanut butter, also delicious. Pickles, sweet or dill, with very thinly sliced raw onion, also great. Next time I’ll try the veggie salami.

When I was a kid, when everybody else’s favorite sandwich was peanut butter, mine was grilled cheese. Now that I grill the peanut butter sandwich I love it, and don’t miss the cheese! Yup, this is my grilled cheese.
