PEANUT BUTTER AND WHOLE GRAIN MUSTARD SPREAD

with brown sugar, Balsamic vinegar and smoke!

Makes 2 cups

1 c. creamy peanut butter (Jif and Skippy brands are gluten-free)

1/2 c. whole grain mustard

2 T. light brown sugar

5 T. Balsamic vinegar

2 T. white vinegar

1 t. liquid smoke

Combine all ingredients in a bowl, one at a time, stirring after each addition. Whip with spoon till mousse-like.

Transfer to jar and refrigerate till ready to use.

Notes: Although grainy from the whole grain mustard, the texture really is mousse-like. Spread on your favorite breads or toast.

There’s a particular taste that salami has. Those who like salami know what that taste is. This particular spread has that essence.
