ALMOND REFRIGERATOR COOKIES
Crisp, rich, almond flavored wafers!
Makes 6 dozen
Preheat oven to 375 degrees
7 oz. Marzipan (almond paste), at room temperature
1 stick margarine, softened at room temperature
1/2 t. sugar
1 t. vanilla
2 t. almond flavoring
1/2 t. salt
1-1/2 c. all-purpose flour
In large mixing bowl combine first 6 ingredients. Mash together with fork till blended, then mash with large spoon till smooth and creamy
Add flour and stir till thoroughly incorporated and smooth again.
Form into oblong ball. Place on a sheet of waxed paper, running lengthwise with the paper. Wrap paper over dough, then roll back and forth till dough forms a 15 inch long log. Roll up in paper and refrigerate overnight.
When ready to use, remove from refrigerator and, using a sharp knife, slice into 1/8 inch thick rounds. Place on baking sheet and bake in preheated 375 degree oven for 5 minutes or till golden around the edges–not browned.
Remove from baking sheet and cool on wire rack.
Notes: Watch carefully while baking these cookies. Each stove is different in temperature and some hotter towards the back, so each may require a slightly different time. You want only golden edges, with cream colored middles. If browned the cookies will taste burned.
If when sl;icing the dough some cookie fray at the edges, just pat it back into place after it’s cut.
