SAUTEED ASPARAGUS
Fresh steamed asparagus sauteed with fresh mushroom, then tossed with fresh tomato and a splash of lemon. A simple and delicious way to serve asparagus as a side dish!
Serves 2
1 bunch fresh asparagus, bottom 3rd of stalks removed and discarded, remainder cut into 1 inch lengths, then steamed till tender but still bright green
1 T. olive oil
2 c. fresh sliced white mushrooms
1/2 c. diced fresh, seeded tomato, 1/2 inch squares
2 t. fresh lemon juice
salt and black pepper
Steam asparagus and set aside.
In medium skillet, over medium heat, melt oil. Add mushrooms, a little salt and pepper, then saute till tender.
Add steamed asparagus; saute 2-3 minutes.
Remove from heat and add tomato and lemon. Stir gently to warm tomato with other ingredients. Salt and pepper to taste and serve.
Notes: Adding tomato after removing skillet from heat still warms the tomato, but keeps it from turning to mush from too much heat.
To seed tomato: Slice tomato into thick slices, then push out seeds and slime of pulp with fingers under cold running water. Dice.
