Black beans, salsa and cilantro. Served with tortilla chips. Can’t get much simpler than that for a special occasion hors d’oeuvre!

Makes a little over 2 cups

15 oz. can black beans, partially drained

½ c. salsa of choice (Tostito brand is gluten-free)

½ c. fresh cilantro leaves, chopped (no stems)

salt to taste

tortilla chips

Combine all ingredients in medium mixing bowl. Stir to evenly disperse ingredients.

Transfer to serving bowl. Cover and let set at room temperature till ready to serve.

If desired, garnish with additional cilantro. Serve with tortilla chips.

Notes: Partially drain beans, leaving some amount of bean liquid for added moisture.

If you prefer a bigger salsa taste, add 1/4 – 1/3 cup additional salsa.

For a slightly different flavor and texture, add ½ cup diced sweet red roasted pepper.
