KNOCK YOUR SOCKS OFF BEANS
Quick, easy, nutritious. Walk on Water delicious. Yes, rich tastes great!
Makes 8 servings
2 T. corn oil
1 lg. sweet onion, peeled and cut into ¾ inch squares
1 sm. green pepper, cored and cut into ½ inch squares
salt
28 oz. can tomato sauce
28 oz. can Vegetarian Beans with Brown Sugar and Spices
2 T. prepared yellow mustard
1 t. liquid smoke
½ t. dried basil
½ t. ground fennel
¼ t. ground allspice
2 T. fresh peeled chopped garlic
1 T. soy bacon bits
salt
16 oz. pkg. orecchiette pasta # 92 (hat shaped pasta)
2 T. margarine
2 T. extra virgin olive oil
1 t. Coconut Oil Spread (Olivio brand), per serving
In extra lg. skillet, over medium-high heat, add corn oil, onion and peppers with a little salt. Saute till tender and a little brown-tinged.
Add tomato puree, beans, mustard, liquid smoke, basil, fennel, allspice, garlic and soy bacon bits. Stir well, and cook over medium-low heat while you make the pasta.
Cook pasta in lots of boiling, sufficiently salted water till tender. Drain well and return to pot.
Add margarine and olive oil to drained pasta. Stir gently till melted.
Spoon pasta onto individual serving plates/bowls. Ladle bean and tomato sauce over pasta, then top each serving with 1 teaspoon of the coconut spread. The coconut spread will melt immediately. If desired, top further with fresh cracked black pepper.
Notes: This is a quick, easy bean dish that will impress you and everyone you serve it to. Sure it’s rich with various oils, but now and then we deserve to enjoy a bean dish that will knock your socks off. On the practical side, it’s inexpensive, hearty and satisfies the entire family.
