SOY FRANKS with BEANS
Skillet baked beans with sauteed onion, garlic and Franks with canned cherry tomatoes, curry and saffron!
Serves 4
2 T. extra virgin olive oil
1 med. yellow onion, peeled and diced
salt and pepper
4 soy hot dogs, sliced crosswise into bite-size pieces, about ½ inch wide
2 lg. garlic cloves, peeled and finely chopped
28 oz. can fat-free Vegetarian Baked Beans
15 oz. can cherry tomatoes with liquid, or diced tomatoes
1 t. mild curry powder
1/4 t. powdered saffron or 1/2 t. saffron stigmas
In large skillet, over medium heat, melt oil. Add onion and sauté till wilted and golden brown. Salt and pepper to taste. Add soy hot dogs and sauté till very lightly crisped on the edges, 1 or 2 minutes.
Add remaining ingredients. Stir well and cook for 5 minutes or till very hot. Serve at once.
Notes: You will never view Franks and Beans in the same way again!
Locate canned cherry tomatoes at your local imported food store. If you can’t find them, substitute diced tomatoes, but try to locate the canned cherry variety; they’re a real treat.
Do not overcook prepared soy meats. The texture will toughen like plastic. Just like the shoe leather of an overdone steak.
Bite-size isn’t the same as mouthful.
