PINEAPPLE COLESLAW III
Fresh strands of green cabbage tossed with a creamy pineapple soy mayonnaise flavored with ginger and dill!
Makes 8 servings
3/4 c. soy mayonnaise
1 t. prepared yellow mustard
1/2 t. dried dill weed
1/2 t. powdered ginger
1/4 t. garlic powder
8 oz. can crushed pineapple, drained well
2 T. sweet chopped onion
salt to taste
1 pound green cabbage, cored and sliced into thin strands
salt and pepper
In medium-sized mixing bowl combine first 8 ingredients. Stir well and adjust for salt.
Place cabbage in large bowl; salt and pepper to taste. Pour dressing over and toss till well-coated. Chill till ready to serve.
Notes: Use a good quality soy mayonnaise. I use Vegenaise, an excellent product. If using Hain’s, salt-free soy mayonnaise, doctor it with a little salt, mustard and lemon juice to your taste.
