CREAMY AVOCADO SALAD DRESSING
Serve this creamy dressing over torn romaine lettuce, diced tomato, sliced cucumber and rings of sweet onion, then sprinkle with freshly ground black pepper.
Makes 1-1/2 cups
1 ripe Hass avocado, seeded, peeled and cubed
1/4 c. corn oil
1/8 c. white vinegar
1/8 c. fresh lime juice
1-1/2 t. mild curry powder
1/4 t. garlic powder
1/4 t. salt plus to taste
1/2 c. nondairy liquid creamer
Place avocado, oil, vinegar, lime juice, curry powder, garlic and salt in blender container. Blend on low speed till blended.
Add nondairy creamer, a little at a time, and blend on medium-high speed till smooth and creamy.
