SWEET APPLE AND ORANGE SALAD
Sweet juicy apples, chunks of navel oranges and ringlets of sweet red onion dressed with a raspberry vinaigrette with a dash of hot mustard!
Makes 2-3 servings
3 T. mild olive oil
1-1/2 tablespoons raspberry vinegar
1/4 t. Chinese hot mustard (dry)
1 lg. red apple, unpeeled, cored and cut into 3/4 inch cubes
2 lg. navel oranges, cut into 3/4 inch cubes
1 light handful thinly sliced red onion rings (use the smaller inner rings)
In large salad bowl combine oil, vinegar, mustard and salt. Stir briskly with fork till thickened.
Add apples, oranges and onion to dressing. Toss to coat well, then spoon onto salad plates and serve at once.
Notes: To cube orange: Cut fruit in half around the equator; turn each half, face down, then cut each half into 4 strips; turn each strip right side up and run a sharp knife between the orange and the peel. Cut into cubes, cutting around any large pieces of membrane.
Use sweet juicy fruit and small sweet onion for a superior salad!
